Mini Polenta Bean Cakes

I made these delicious Polenta Bean Cakes with a recipe from the Martha Stewart cook book I have. This was a perfect side to a dinner or a little lunch entrée. It was kind of time consuming to make but not too bad. You just had to cut a veggies and throw them in a pot with some mashed beans and diced tomatoes. Once that had thickened, I poured the mixture into the dishes which each had a polenta slice at the bottom. Then I topped each one with pepper jack cheese. We had these with some smashed potatoes for dinner and then brought the rest for lunch throughout the week. All you have to do is heat them in the microwave for a tasty lunch! This is a recipe we will definitely do again.
