Here is an amazing meal I got from one of our cookbooks. I wanted to make Andrew a nice dinner when he got back from Virginia, and nothing does it for him like steak! I found this in a cookbook and knew he would love it. I got some sirloin and seared it, but the main part was the delicious pistachio pesto. You just chop some pistachios and add it to minced parsley, garlic, olive oil and spices. It went so great on this and in sure it would be tasty on chicken or pork as well. The potatoes were very easy, I just sliced them thin and roasted them. The baby broccoli too just took some steaming. The meal came together really fast and tasted like it was from a restaurant. I may finally be getting the hand of this cooking thing.
